What an opportunity for two talented chefs – expand the menu at two locations of popular Burtons Grill by creating a Burger Bar. Their directive: “add value, be innovative, be gluten sensitive.”
A sampling of the new entries on the ten item insert for Burtons in Virginia Beach and Charleston SC is leading diners to agree they succeeded.
“Guests love the choices,” says Danny Azzarello, who along with Daniel Greenough, came up with the final list of options. “For instance, they had never seen something like The Pimento, angus beef topped with pimento cheese, pickled jalapeno and piquante peppers, shredded lettuce and chipotle mayo. It’s real tasty.”
The chefs, who work out of Burtons’ Massachusetts headquarters, also are proud of the Black and Blue, a healthy helping of ground chuck and angus beef topped with buttermilk blue cheese, arugula, balsamic mayo and peppered onions. And they are not surprised that non-beef fans are taking to the ground turkey, salmon and tuna “burgers”, the latter served on a griddled bun with sliced cucumber, pickled red onions, wasabi mayonnaise and citrus soy sauce. “We tried a lot of combinations before settling on the Burger Bar menu,” says Greenough. “It was fun.”
For bigger eaters, there is the Double (B) Maxx that includes crispy onion straws and Burtons’ special sauce. For those who prefer their food “hot”, there is the Bonfire, which features tomato jalapeno relish, sriracha aioli and sweet and spicy chili pepper sauce. A bronzed fish sandwich is also available, as is a grilled chicken with avocado, spinach and tomato and lemon aioli. House made pickles come with each order. All of the choices on the new menu can be prepared gluten sensitive in Burtons’ kitchen, which takes extra care to ensure equipment and dishes have none of that protein composite found in foods processed from wheat and related grain species.
The Burger Bar menu, priced from $9.95 to $13.95 and including Burtons’s signature french fries, is available for lunch and dinner. Sunday through Thursday from 3pm-6pm, all of the sandwiches are half price. Diners will also find several new entrees on the expanded menu in Virginia Beach and Charleston, including a prosciutto wrapped cod, mahi with bourbon pepper sauce and two shrimp, pan roasted chicken, flat ironed steak and diced sirloin chili, prepared with cumin, chopped bacon, black beans and more.
